Go to User Control Panel -> Profile -> Edit account settings and you can specify a different e-mail address to be shown than your actual one under the "Contact e-mail address".

But what I wanted was to simply hide my email address. Perhaps the below will do it?
There is no need to worry about this, only you and our administrators can see your account email address, our forums have a global option so that (except in the case of users who set their email address as their username) it is not possible for others to see your email details.
As an example, I have just signed in as another random user on the forums, and as you can see, the "contact" button simply does not exist:

What you see there is one of the "skins" that we offer for the forums. You should be able to change that from your user profile settings as well, like the other items I see you have started a few threads about.

Sorry to be unclear, Daniel. The forms difference I meant is the lack of "Contact email address", which surely is not the result of a different skin. For what it's worth, the skin I am using is the default.
Oh! my apologies for misunderstanding. The "contact email address" is a special field only present for administrator accounts, it exists so that we can collectively ensure if a user click on any of our admin "contact" buttons, it will always point you to "support@pdf-xchange.com" (or another common address) instead of our much less frequently monitored personal inboxes.
