when OCR is in action, opening another PDF-file crashes the program.

Thanks for the post - while it shouldn't necessarily crash, when the OCR is running, you will need to wait before any other operations can be completed.

I'm converting big files and it takes a lot of time ... sometimes I forget that OCR is running
Maybe, another instance of the viewer that opens when OCR works would be the key?!

(Edit --> Preferences --> General --> Allow Multiple Instances)
