Cannot select text to highlight it

Hello,
I downloaded the menu PDF file from this restaurant website : https://www.lasalmoneria.it/menu/
and I cannot select text to highlight it. Xodo 7.1.3 PDF viewer for Android can do it (select text and highlight selection), but not PDF X-CHANGE EDITOR 9.0.3.
The content does not look like to be a pixel image because the characters shape is still curved (not pixelated) when I zoom to maximum value, and anyway, Xodo can select the text and highlight the selection.
How to select text to highlight it using PDF X-CHANGE EDITOR 9.0.3?
Question 2: how to remove the background image (salmons) to reduce the file size?

1) The (English) PDF consists of multiple images:
Click the View-ribbon > Panes > Content, and click the tiny triangle before a given page to see the content
What you can do, to make it possible to highlight text, is apply OCR (that you can find in the Convert-ribbon).
2) To remove the background of a page:
In the Home-ribbon, click Edit > All content, then click somewhere near the border of the page
You will see a colored rectangle around the page. Press the "Delete"-key on your keyboard.

PDFXChange offers their enhanced OCR for free with their latest version. You should be able to get a good OCR converted Text.
Honestly, these people are the best in terms of customer service.

Thanks a lot Willy, I solved my problem following your clear explanation.
But, after removing all background salmons images and text images converted/left by the ORC tool, the PDF file size is not lighter, but the same size or even a little heavier. Even if I "Save as a new file". Why?
Please Daniel, can you add 2 options in the OCR tool popup:
- a check box to remove automatically the converted image(s)
- a color palette to choose the new text color, including an option "same as text image"

The "Enhanced OCR" function does already offer the ability to directly create editable text from an image based page, this includes retaining the original text color during the process, Likewise, we offer a "fine page content" option, which should remove unnecessary page content, leaving you with only the OCRed output, and perhaps a few images which OCR text could not be located inside of.
In many cases the Fine page content option will also result in a reduction of file size as well, but in cases where that does not help, you can use the "Save as optimized" function to strip extraneous data from the document. This option is available under the File menu.
