Personally I find continuous (page-scrolling) mode to be preferable to single-page mode most of the time, even in full-screen view.
I understand that others may commonly like to have single-page mode whenever they are in full-screen view.

However, surely it's reasonable to respect the user's preferences for full-screen viewing mode after the user has explicitly configured them for the particular file in that session!
Consider the following sequence:
- Select a file to open.
- File opens in normal view. If ever(?) opened before, the last-selected viewing mode for the file will be used, and it will be opened with the same magnification and on the same page as when it was last closed. Great stuff!
- View in full-screen. It is launched in single-page mode,
- Reconfigure to continuous page mode.
- Happily read.
- Realise you want to do something to the file, so temporarily leave full screen mode and return to normal view.
- Complete the desired action (e.g. add a comment, edit the text, check the file properties — whatever).
- With the same session, with the same file, without ever closing the file, go back to view in full-screen. It is again launched in single-page mode!
At least for that particular file in that particular session.
Note that the users who love single-page mode in full-screen view would be highly unlikely to reconfigure it as above in step 4. So I don't see any downside for those users, even if they are in the majority.
