Hi,
Can you setup up on the toolbars two rectangles with different defaults?
Eg one is all white and the other is see through with a border - we use both regularly however I only seem to be able to have one default?

Yes, this can be done by creating custom styles, then using the "customize toolbars" function to add those specific functions to the UI (or by right clicking the rectangle tool to select different styles).
