Manage Signature and Initials

For some reason I can't find where to manage signatures and initials that used to be under the Documents menu. In V7 since the documents menu isn't available I can't seem to find those in any tab, and I do use those all the time. In the online docs it still says to go to the Document menu, thus searching help and googling hasn't really helped me.

I've tried clicking all of the available signature buttons, but they don't deal with transparent signatures and initials.

In the ribbon interface this option is now in the Protect tab:
