Classic UI in v7

Hey all,

Just upgraded to v7, and while I don't mind the ribbon, I want to ease into it and go back to classic UI for now. I see that is an option...

...Unfortunately I cannot find where to set the UI back to "Classic". I have been poring over preferences for 10+ minutes now and cannot find it, and I cannot find it in the Help.

Please help? How to I go back to "Classic UI" in version 7.0?
