Anyway to get v7 UI colors to get closer to v6?

I dislike the flat white look of v7, v6 respected your OS colors, such as the black bar at the top, and v6 had a more grayish color for everything else.

I like the colors and look of both UI's. Please don't forget about the File menu not fitting on "vertically" challenged computer screens.

that File Tab not scrolling caught me too! Vasyl pointed out that there is a scroll bar to the right that can be used to access these parts. The scroll wheel should also work when the mouse is over that red panel and it doesn't, he is also going to fix that.

I think that with scrolling fixed we will leave the size alone. That seems to be the default way Ribbon UIs address this.

The red of the file menu likely will not be changing, but you are now able to fully customize the UI colors from the Preferences (Ctrl_K) under "Customize UI" (colors changed in screenshot as an example):
