This has been passed onto the development team to add to the manual as it is beyond my understanding of the topic.
RE video: I believe the intermittent bug is in the software we purchased that creates and presents the online manuals, I've passed the issue on to them to have a look at.
In Watermark settings the list of watermarks can be sorted with the button right (up, down, ..).
Which effect has the order of the list on the result? First entry is on top, last on bottom? Or is no effect on result, only sorting for the user?
That is merely an organization tool for the user to place the watermarks entered in the list into whatever order they want, and the only effect would be the order in which watermarks are applied to the document if multiple watermarks are selected to be applied.
Regarding the links going to home, that is something new that just started happening it's not affecting the Editor manual if you view the links through selecting the pro bundle or the Editor manual on it's own. But appears to be effecting the PDF-Tools and PDF-XChange Standard manuals which were created exactly the same so I am working with the software developer to address these issues. Sorry for any inconvenience

The Profiles: all settings are included and saved in the profile, but you can set whatever settings you want and then save them to a specific profile, so range just means the settings you change to create a specific profile. I guess "variety" of settings may work better for your understanding there is no included or excluded settings, all settings are saved in a profile.
So for example:
I want a profile that prints onto letterhead via an overlay and sets the security permissions to print only.
So I set the Overlay and Security settings which is my "range" of altered settings for the profile.
The OFFice2PDF section used to be a separate merged manual so I will fix the links.
