Do you have some kind of fields editor which allows to add and edit fields properties (as you have with other annotations) ?

it's coming...
V3 of the Viewer will allow basic changes to form fields and we are planning a 'Forms Builder" that will give you more extensive control over form fields. V3 is scheduled for the end of Spring and the "Forms Builder" will be after that.
