I would like to find all PDFs in a directory tree which contain
pattern aaaaa AND pattern bbbbb
but not necessarily one after the other.

Pattern aaaaa could appear in line 23 of page 4 while pattern bbbbb appears on page 2 in line 7

How can I define such a pattern search in PDF Xchange Viewer?

This should be easily done with the "advanced search" both in the Viewer, and the Editor (the successor to the viewer).
Since you are asking about the viewer specifically here, use the dropdown arrow on the search field, and choose "advanced": I hope this helps!
