To delete any form field, including check boxed, you will need an "Editor Plus" license key. Then you can activate the "select fields" tool on the "form" tab, to select and delete any form field content in any document which is not locked to prevent this kind of editing.

This issue us caused by text hinting, which can be disabled manually from the preferences (Ctrl_K):

To my knowledge, Adobe has this disabled by default, we leave it enabled unless the document explicitly requests that it be disabled.
